Fillet of beef with herb butter

To easily cook the fillet steak to perfection, without any added fat, you will need a small frying pan (single egg size; 12cm diameter) for each steak.
- Blend 10g butter or 20g low fat spread with either one or two teaspoons of chopped herbs, lemon juice and seasoning. Fill a section of an ice cube tray with the mixture, neaten and chill.
- Have a kettle of boiling water to hand. Heat the two egg pans over a high heat. Add a steak to each pan and sear both sides. Turn the heat down to medium and cook for approximately 2 minutes on each side. If the steaks begin to stick add a few drops of the boiling water to the pans. Remove from the heat and allow to stand in the pans for approximately 8 minutes.
- Remove the herb butter from the fridge, cut in half and place one piece on each steak, and allow to melt slightly.
- Serve with a mixed salad or steamed seasonal vegetables. 2 plan can add 100g small new potatoes.

1 or 2 teaspoon Fresh mixed herts, chopped finely; chervil, chives, marjoram and parsley
1 squeeze Lemon juice
